Abstract

Ginger (Zingiber offinale Roscoe) is one of the most widely used herb that contains several bioactive constituents and possesses health promoting aspects. The objectives of this research are i) to evaluate the proximate composition and physical analysis of Bentong gingers and commercial gingers powder (ii) to determine bioactive compounds of Bentong gingers and commercial gingers powder stored at room temperatures and 40°C using reversed-phase high performance liquid chromatography (RP-HPLC) method. In this study, varieties of Bentong ginger (Zingiber officinale var Bentong) and commercial gingers are dried at 50°C and grinded to fine powder. They are sealed and kept under storage of room temperature and 40°C. The changes of bioactive compounds in ginger powder at different temperature were studied. Results showed that storage at 40°C did not influence the colour of the powder. Moisture content was found to be in range of 7.7-13.1%, while crude protein, crude fiber, crude fat, carbohydrates and ash contents ranged from 7.0-17.4%, 4.5-9.7%, 4.2-10.1%, 51.1-62.8% and 5.2-12.7% respectively. The HPLC results revealed [6], [8] and [10]-gingerols content of ginger powders decreased gradually at 40°C then ginger powder at room temperature. However, the level of [6]-shogaol showed significant increment at storage of 40°C in comparison to room temperature storage. The study revealed that gingerols will gradually decompose and convert into shogaols on storage.
