Abstract

One of the most eminently valued food products of South East Asia is the edible bird`s nest (EBN) which are made from the saliva of swiftlets (genus Collocalia). Lemongrass (Cymbopogon citratus) extract was added in the RTD-EBN, to mask the odour of EBN which was found be similar to an egg white. This research was carried out to evaluate and analyze the acceptability and perception of RTD-EBN with lemongrass extract among students in Tunku Abdul Rahman University College. Simple random sampling technique has been used to conduct this survey, which consists of 300 respondents. 73.8% of them were female and 26.7% were male. 94.3% of them consists of Chinese respondents and the least are Malays and Sikh, 0.3% respectively. 37.2% of the respondents prefer the nutritional properties of the EBN compared to its gelatinous texture, taste or appearance. 47.8% of them have responded to like the aroma of lemongrass compared to its nutritional properties, taste and tanginess. Data also reveals that 36.0% of the respondents do not know the health benefits of stevia. 79.3% of them have responded to the expected price range to be within RM 50-100. Nevertheless, according to data, 79.3% of them are willing to purchase this product upon knowing its benefits and price. Results from the ranking questionnaire reveal that 48.3% of the respondents have chosen ‘neither like nor dislike’ as their degree of liking towards the overall acceptability of this product. The RTD-EBN are made up of 78.57% of distilled water, 18.86% of lemongrass and 0.24% of EBN chunks. The serving size of the product is 100 ml.
