Abstract

Edible bird’s nest, or “Yan Wo”, a traditional medicine and Jujube (Ziziphus jujuba Mill), also known as chinese date, red date, or tsao (zao), increasing consumed due to their potential nutritive value. The study was conducted to evaluate the consumer acceptability on red dates extract containing edible bird’s nest jelly bar and identify the factors that affect the consumer purchasing decision on food product among TARUC community. The prototype formulation of red dates extract containing edible bird’s nest jelly was developed to meet the consumer demands based on research. A total of 300 university college community participated in this cross-sectional study using simple random sampling technique. The college communities were required to provide information on their personal background and acceptability on red dates and bird’s nest and in a self-reported questionnaire. The data were analysed using Statistical Package for Social Sciences (SPSS). 37.3% of the respondents choose nutritive value as the main factor to purchase jelly product. There are 80.3% of respondents agreed that the preparation of bird’s nest with red dates soup is time consuming. 68.3% of the respondents has likeness on the combination edible bird’s nest and red dates. This aligned well with the development of the red dates extract containing edible bird’s nest jelly bar based on consumer survey. Edible bird’s nest and red dates can be transformed into jelly product which is ready-to-eat(RTE) with higher nutritional value, which no longer cooking time like the traditional edible bird’s nest soup that is time consuming.
