Abstract

Vitamin C is an important compound and it plays a key role in human biological function which correlates to health. Recently, many researchers have increased their scrutiny and analysis on the vitamin C content in foods. The goal of this study is to study the background of vitamin C and to evaluate the best way to determine and quantify the total vitamin C content in foods such as fruits, vegetables and daily supplements. In this study, five published researches were reviewed and described in detail. The methods which had been discussed included titration, spectrophotometric and chromatographic methods with different reagents and chromatographic conditions. Based on the results, spectrophotometric and chromatographic methods were more sensitive compared to titration methods. However, the titration method was more suitable for the analysing of multivitamin supplement than chromatographic method as the LOD and LOQ were not critical in choosing the best method. Due to the difference in sample used and conditions as mentioned in the researches, this study provided a limitation in which the comparison of all methods may not provide a specific conclusion to identify the best way in vitamin C content quantification. Thus, further researches based on similar samples and methods are encouraged to eliminate this constraint.
