Abstract

In this study, three different underutilized tropical local fruit seeds namely cempedak (Artocarpus champeden), jackfruit (Artocarpus heterophyllus), and papaya (Carica Papaya L.). proximate compositions were evaluated. The objective of this study was to determine the proximate composition and physicochemical properties of the three underutilized tropical fruits seed. Crude oil, crude protein, ash content, crude fiber and carbohydrate content were determined. The colour, peroxide test and iodine value of extracted seed oil was evaluated. There were significant differences (p < 0.05) of the color (L* value, a* value, b* value), iodine value and peroxide value among seed oils that extracted from these three fruits. As for the proximate composition, it also showed that all the three fruits exhibited a significant difference (p < 0.05) where the crude protein percentage for papaya seed was 31.71±0.12 followed by cempedak seed which is 11.29±0.08 and jackfruit seed which is 10.25±0.22. For crude fat percentage, it showed that papaya have a high crude fat extracted of around 34% compared to the rest where the average of the jackfruit and chempedak was around 2%. In conclusion, this study shows the proximate and physico-chemical analysis of the three fruits and that further testing and precaution is needed to conduct the analysis of the oil as high value of peroxide and iodine value are recorded. Overall, this study provides information on different underutilized tropical local fruit seeds for future exploitation by the food industry.
