Abstract

Flaxseed oil or known as linseed oil originates from flax seeds and can be obtained through grounding, pressing followed by solvent extractions. It is rich in Omega-6 and Omega-3 fatty acids, typically alpha-linolenic acid. These essential fatty acids are necessary for our growth and of great health benefits to us. Flaxseed oil is well known for its health benefits like lowering inflammation, lowering LDL (low-density cholesterol), preventing heart disease, etc. However, due to its nature of having high content of polyunsaturated fats, flaxseed oil is susceptible to rancid (lipid oxidation). In addition, it is heat and light sensitive and has a relatively short shelf life once opened. Thus, in this research, flaxseed oil was coupled with pandan extract powder to develop a new functional food product through encapsulation and freeze drying. The formulation consists of flaxseed oil, pandan powder extract, maltodextrin and whey protein isolate. The physicochemical properties and antioxidant activity of the product were determined. The emulsions were homogenized (10000 rpm/4mins), freezed (-80°C), freeze dried and ground into powder. Color (L*, a*, b*), physicochemical properties and antioxidant assay were performed on the oil powder. Portions of the samples were put into an incubator for accelerated shelf life test (40°C/3 weeks). The DPPH % of fresh oil powder obtained were 17.31% ± 0.59 and TPC obtained were 3.97 ± 0.09 (GAE g/mg). Pandan that were used in the formulation provides antioxidant properties, health benefits and extra fragrance to the oil powder. In summary, freeze dried flaxseed-oil powder with an aromatic scent was developed. Physicochemical properties and antioxidant activities of the oil powder were determined. Flaxseed oil powder also has the potential to be incorporated into different product lines such as bakery, desserts or beverages.
